Tellicherry peppercorns are something special. The individual peppercorns are carefully hand-picked and are the largest berries from the crop after drying. We source this variety from the Periyar Wildlife Sanctuary in the Indian state of Kerala on the Malabar Coast and it is named after the port city of Tellicherry (Thalassery). Their taste is very aromatic and slightly sharper than ordinary black pepper. Because of the limited scale of the harvest from this region, only small amounts of the best Tellicherry pepper is processed annually and also they are left on the vines to mature longer. This late harvest pepper gives a more intense, warmer and nutty in flavor than standard black pepper with hints of tea and sandalwood. This is a best used freshly ground and in small amounts on all manner of dishes.
