This distinctive mix owes much to its varied roots. Similar in many ways to its warmer cousin, Cajun mix. Creole takes hints from Italian, Latin American and far eastern cuisines to produce a mild, rich spice rub perfect on chicken pieces, sweet potatoes or in stews such as Louisiana gumbo.
