Peri Peri rub

This Peri Peri rub has its roots firmly in South Africa and is delicious rubbed on any cut of pork, chicken or sea food before cooking. Barbequed pork loin chops dusted with Peri Peri or big fat juicy prawns are not to be missed.

Simply add some of the spice mix to your chosen ingredient prior to cooking and the longer you can leave the ingredients to get to know each other the better, but even 20 minutes can make all the difference.

A word of warning, this blend is not for the faint hearted, it is hot and is the big brother of Portuguese Piri Piri, famed for use with chicken.
